Poultry: Nutrition Facts for Chicken, Turkey, Duck
Poultry covers chicken, turkey, duck, goose and game birds such as quail, pheasant and partridge. As a group it provides high-quality protein with a generally lower saturated-fat profile than red meat, particularly when the skin is removed before cooking. Chicken alone accounts for the majority of UK poultry consumption, with turkey rising sharply around Christmas and falling back through the rest of the year.
Different cuts of the same bird have very different nutritional profiles. Chicken or turkey breast (skinless) is one of the leanest meats available in mainstream UK shops, typically around 110 kcal per 100 g raw with over 22 g of protein. Thigh, leg and wing meat carry roughly twice the fat content but more iron, zinc and the connective tissue that makes braised dishes work. Skin adds substantial fat regardless of bird; it also carries flavour and helps lock in moisture during roasting.
Duck and goose sit at the richer end of the category. Their flesh is darker and the fat layer is thicker, but the rendered fat itself is highly prized in cooking and stores well. The fat composition tilts toward mono-unsaturates rather than saturated, which is unusual for an animal fat. Goose fat in particular is a traditional UK roast-potato medium.

UK food-safety guidance is to cook poultry until the juices run clear and the centre reaches 75 °C; pink meat in chicken or turkey signals undercooking and should not be served.
