Serve with horseradish cream, Yorkshire pudding, and roasted vegetables for the classic Sunday roast.

The ribeye comes from the longissimus dorsi along the upper rib, and it is the cut most butchers and chefs will name if asked which steak has the most flavour. The reason is marbling: this muscle does relatively little work and accumulates intramuscular fat in fine seams through the meat rather than as a rim around it.
The anatomy is worth knowing because it determines how to cook it. A ribeye is really two muscles: the round central eye (longissimus) and, wrapped around one side of it, the spinalis dorsi or ribeye cap — fattier, looser-grained and widely considered the best-eating muscle on the animal. They cook at different rates, which is the argument for cooking a ribeye hot and fast and accepting a gradient rather than trying to bring the whole steak to one uniform temperature.
Marbling also means a ribeye tolerates higher heat than a lean cut: the fat renders and bastes the meat from inside. It is the wrong cut for slow braising, where its advantage is wasted, and the right one for a very hot pan or grill. The one thing that ruins it is cooking from cold and cutting immediately — let it come to room temperature and rest it for a good five minutes.
