Molasses: Nutrition, History and Complete Culinary Guide

Molasses is the dark, thick syrup produced as a byproduct of sugar refining — the liquid remaining after sugar crystals have been extracted from cane juice. Multiple boilings produce increasingly dark, complex, and mineral-rich molasses: first molasses (from the first extraction) is the lightest and sweetest; second molasses is darker; and blackstrap molasses (from the third extraction) is the darkest, most bitter, and most nutritionally dense, with the highest mineral concentration. Molasses has been an important sweetener and ingredient since the colonial era — in Britain and especially in the American colonies (before refined white sugar became affordable), molasses was the primary available sweetener and was used in gingerbread, baked beans, brown bread, rum production, and as a daily sweetener. The famous "Molasses Act" of 1733 and subsequent taxation of molasses helped catalyse American colonial resentment that contributed to the Revolution. In British baking, treacle — particularly dark treacle or black treacle — is the equivalent product with similar character. Treacle tart, gingerbread, and sticky toffee pudding all depend on treacle/molasses for their defining depth.

Nutritional Value of Molasses

Blackstrap molasses provides 290 kcal and 74.7 g of sugar per 100 g — lower in calories than white sugar because significant quantities of non-sugar solids are present. What distinguishes molasses nutritionally is its exceptional mineral content: it is one of the richest common food sources of iron (approximately 4.7 mg per 100 g — meaningful for non-haem iron intake), calcium (approximately 205 mg per 100 g), magnesium (approximately 242 mg per 100 g), and potassium (approximately 1464 mg per 100 g — one of the highest potassium densities of any food). It also provides B vitamins including B6, thiamine, and folate. A tablespoon (approximately 20 g) of blackstrap molasses provides approximately 0.9 mg iron — around 5–10% of daily requirement — making it one of the few plant-based foods that can meaningfully contribute to iron status.

How to Use Molasses

Use in gingerbread, treacle tart, sticky toffee pudding, dark fruit cake, and Christmas cake for depth and bitterness that balances the sweetness. In Boston baked beans (the definitive use — slow-cooked with molasses, mustard, and salt pork for hours until rich, dark, and complex). In American barbecue sauce as a base sweetener alongside ketchup and vinegar. A tablespoon in oatmeal or smoothies for an iron and mineral boost. In home brewing as a fermentable sugar. In brine and marinades for a dark, complex sweetness. Dark treacle is the British equivalent — interchangeable with blackstrap molasses in most recipes.
