Agave encompasses over 200 species of succulent plants native to the arid regions of Mexico and the American Southwest, growing large rosettes of thick, fibrous, often spined leaves and typically flowering once — dramatically and spectacularly — before dying. Agave species have been central to the cultures of indigenous Mexican peoples for thousands of years, providing food, drink, fibre, building material, and medicine. The heart of the agave plant (the piña, literally "pineapple" in shape) contains complex carbohydrates — primarily fructans, particularly agavins — that provide stored energy for the eventual flowering. This entry represents the fresh agave plant, which at 68 kcal and 16.2 g of carbohydrates per 100 g reflects the undried, unprocessed composition — high in fructans rather than free sugars. Agavins in raw agave function as dietary fibre (they are not readily absorbed in the small intestine), which is what produces the low initial sugar reading — the fructans must be hydrolysed by heat or acid before they become sweet and fermentable. Traditional Uses of Agave

The sap of agave hearts (aguamiel, "honey water") is fermented to produce pulque — a milky, slightly alcoholic traditional Mexican drink with deep pre-Columbian cultural roots. Cooking or roasting the agave piña (heart) breaks down the fructans into simpler sugars; the roasted piñas are then crushed and the juice fermented and distilled to produce mezcal (any agave spirit) and tequila (specifically from blue agave, Agave tequilana). The raw fresh plant, as consumed as a traditional food in Southwestern Native American traditions, provides the fructan carbohydrates as a slow-release energy source behaving more like fibre than sugar.
