Vegetable Shortening: Nutrition and Baking Guide

Vegetable shortening is a solid, white, flavourless fat made from refined and processed vegetable oils — most commonly palm, soybean, or cottonseed oil fractions — formulated to remain solid at room temperature. It is 100% fat with no water, giving it different functional properties from butter in baking: the absence of water means no steam production during baking, producing a more uniformly tender crumb rather than the layered flakiness butter creates. The neutral flavour makes it a clean canvas for other flavours. Modern vegetable shortening is formulated without partial hydrogenation to avoid trans fat generation, using fully hydrogenated or interesterified palm or cottonseed oil fractions blended with liquid oils. The result is a product with a higher saturated fat content than liquid vegetable oil but without the trans fat associated with historical partial hydrogenation.
