Cake and frosting shortening — often called "hi-ratio" shortening in professional baking — is a specially formulated shortening for cake and frosting applications that contains a high proportion of emulsifiers, enabling it to hold significantly more sugar and liquid than standard shortening. Hi-ratio shortenings can support a one-to-one ratio of fat to sugar, producing very light, fine-crumbed cakes with exceptional moisture retention. The emulsifiers (mono- and diglycerides, polysorbate 60) allow more air to be incorporated during creaming and enable a higher liquid-to-fat ratio without the batter breaking. For frosting, high-emulsifier shortening produces stable, brilliantly white, smooth results that hold up at room temperature — essential for the structural frostings of wedding and tiered celebration cakes. The nutritional data (884 kcal, 100 g fat, 20 g saturated fat per 100 g) reflects the lower saturated fat of these specifically formulated products relative to confectionery shortening.
