Industrial shortening is formulated specifically for commercial food manufacturing operations — bakeries, food processors, and large-scale catering — rather than for home use. It is produced to meet precise functional specifications: consistent smoke point, plasticity range (the temperature range within which the fat can be worked mechanically), melting point, and compatibility with automated production equipment. Industrial shortenings vary considerably in their formulation depending on the intended application — bread production requires different fat characteristics from biscuit production, which differs from frying applications.
