Vegetable Shortening: Nutrition, History and Baking Guide
Vegetable shortening is a solid fat made from vegetable oils — most commonly a combination of palm oil, cottonseed oil, soybean oil, or rapeseed oil — processed to achieve a consistent solid texture at room temperature. The term "shortening" derives from its principal culinary function: in pastry and biscuit making, adding fat "shortens" the gluten strands that would otherwise develop in flour, producing a tender, crumbly, "short" texture rather than a tough, chewy one. Crisco — introduced in the United States by Procter and Gamble in 1911 as the first commercially successful all-vegetable shortening — became one of the most important products in twentieth-century American domestic cooking, marketed as a purer, more modern alternative to lard. For decades, Crisco was made by partial hydrogenation, which created trans fats; it was reformulated without partial hydrogenation in 2007. Modern vegetable shortening uses fully hydrogenated oils or interesterified fat fractions to achieve solidity without trans fat generation. Vegetable shortening remains more common in American baking than British baking, where butter and lard have retained more prominence.
Nutritional Value and Baking Science
Household shortening provides 884 kcal and 100 g of fat per 100 g, with 25 g of saturated fat. The lack of water (unlike butter, which is 15–16% water) means shortening produces different textures in baking — extremely tender and crumbly without the steam pockets that butter's water creates for flakiness. This makes it excellent for very tender biscuits, some pie crusts, and certain cakes. Its neutral flavour carries other flavours without adding dairy character. For white frosting and buttercream: shortening-based frosting holds its shape better at room temperature than butter-based frosting and remains brilliant white — important for wedding and celebration cake work where colour matters.
