Confectionery shortening is a highly saturated, hard fat specifically formulated for use in chocolate manufacturing and confectionery production. With 65.5 g of saturated fat per 100 g — one of the highest saturated fat levels of any commercial fat product — it is designed for the demanding requirements of confectionery work: it must set firmly and cleanly at room temperature, have precise melting characteristics that produce a "snap" and clean melt in the mouth, and be compatible with chocolate tempering processes. These highly saturated fats (often palm kernel oil, fully hydrogenated palm oil, or similar products) are chosen specifically because their crystal structure closely mimics that of cocoa butter, making them compatible with or interchangeable with cocoa butter in chocolate manufacturing. The specific saturated fatty acid profile — predominantly lauric and palmitic acids — is important for producing the correct crystal form (form V cocoa butter crystals) in tempered chocolate.
