Low-fat spreads or half-fat spreads provide approximately 349 kcal and 38 g of fat per 100 g — roughly half the fat and calories of butter or standard margarine. This is achieved by incorporating a very high proportion of water (typically 40–50%) alongside the oil fraction, stabilised with emulsifiers and thickeners to achieve a creamy, spreadable consistency. The resulting product cannot be used for cooking — the high water content causes violent splattering when heated, and its softness makes it unsuitable for creaming or rubbing into flour for baking. As a strictly spreading fat on bread, toast, and crackers, however, it delivers a reasonable butter-like flavour at significantly reduced caloric cost — a practical option for those managing overall fat and calorie intake while maintaining a dairy-based spreading product.
