Vegetable oil spreads — products that are similar to margarine but with lower fat content and often marketed under descriptors like "light," "reduced fat," or simply as "spread" — occupy the space between full-fat margarine and the very low-fat spreads. Providing approximately 606 kcal and 68 g of fat per 100 g, they contain significantly more water than standard margarine (around 30–40% water versus 16% in standard margarine), which makes them soft and spreadable directly from the refrigerator but unsuitable for frying or high-heat cooking where the water would cause dangerous splattering and poor results. They suit spreading on bread and crackers, and can be used in simple baking recipes where the fat-to-water balance in the product has been accounted for.
