How to Cook Veal Stew Cubes

For blanquette de veau: cover veal with cold water, bring to a boil, drain and rinse — this removes impurities and keeps the sauce white. Return to fresh stock with onion studded with cloves, carrot, and bouquet garni. Simmer gently — never boil — for sixty to seventy-five minutes until tender. Remove veal. Make a velouté with butter, flour, and the cooking stock. Stir in cream and egg yolk off the heat. Return veal with blanched pearl onions and sautéed mushrooms. Serve with rice, pasta, or crusty bread.
