The beef loin is one of the most prized primal cuts, running along the top of the animal's back from the rib to the hip. Season generously with salt and pepper before cooking. Rest all steaks for at least five minutes before cutting. Loin roasts should be seared at high initial heat then finished at moderate temperature (180°C) to desired internal temperature, resting well before carving.
