Beef Carcass Composition: Reference and Context

A beef carcass is the body of the animal after slaughter and dressing — after the hide, head, feet, and internal organs have been removed. The whole dressed carcass is the starting point for all beef production, from which butchers and meat processors divide the animal into primal cuts (the major sections such as chuck, rib, loin, round, and brisket) and then into the retail cuts familiar to consumers. The carcass yield — the proportion of live weight that becomes saleable meat — is typically around 50–60% depending on the breed, age, and finish of the animal. Full carcass utilisation — using every part of the animal including offal, bones, fat, and less popular cuts — is an important sustainability principle in responsible meat production. When consumers only purchase a small range of popular cuts, the remaining parts of the carcass must be processed into lower-value products or discarded. Choosing less popular cuts such as shin, cheeks, oxtail, and organ meats reduces waste and is often more economical. Bones are excellent for making stock, which extracts minerals and gelatin that would otherwise be lost.
