Garlic (Allium sativum) has been cultivated for food and medicine for at least seven thousand years, used in ancient Sumerian and Egyptian cooking, mentioned in the oldest known recipe collection (ancient Mesopotamian cuneiform tablets), and so essential to ancient Egyptian workers that when rations were disrupted, they stopped work — a documented labour action over garlic supply. Garlic powder is produced by dehydrating and finely grinding garlic cloves, concentrating their flavour and converting alliin (relatively inert in the fresh clove) through enzyme activity during processing. Garlic powder has different flavour characteristics from fresh garlic: less sharp and raw, with a more rounded, concentrated cooked-garlic sweetness, and without the pungency of the allicin produced when fresh garlic is cut or crushed.

Allicin — formed when fresh garlic is cut or crushed — is garlic's primary bioactive compound, with demonstrated antimicrobial, anti-inflammatory, and cardiovascular properties. Most of the clinical research on garlic's health effects (reduced blood pressure, reduced LDL cholesterol, antimicrobial properties) uses aged garlic extract or garlic supplements rather than garlic powder. Garlic powder provides some but not all of garlic's bioactive compounds — the allicin formation process is disrupted by dehydration. For maximum health benefit, use fresh garlic. For convenience and concentrated flavour in dry rubs and spice blends, garlic powder excels.
Culinary Uses
Garlic powder is irreplaceable in dry spice rubs for barbecue, in seasoning blends, and in any application where fresh garlic's moisture or texture is undesirable. Essential in American barbecue rubs alongside paprika, cumin, and brown sugar. Use in spice blends for roasted nuts, popcorn, and snack foods. Add to bread dough for garlic bread. Use in compound butter. Excellent where a dry-mixed spice application is required — garlic powder distributes evenly in a way that fresh garlic does not.
