Oyster: Nutrition, History and Cooking Guide

Oysters have been eaten with enthusiasm and reverence throughout human history. Enormous ancient shell middens along the coasts of Britain, France, Scandinavia, the Americas, Australia, and Japan testify to the centrality of oysters to the diet of coastal peoples for tens of thousands of years. In ancient Rome, oysters were a luxury food consumed in extraordinary quantities by the wealthy — the writer Pliny described the Roman enthusiasm for oysters with a mixture of admiration and condescension. In eighteenth and nineteenth-century London, oysters were cheap, abundant street food eaten by the working class — a single penny bought a dozen native oysters at the Thames-side oyster stalls described by Charles Dickens in The Pickwick Papers. The collapse of Thames estuary oyster beds from overharvesting and pollution in the late nineteenth century transformed oysters from everyday fare into the luxury item they are today. Colchester, Whitstable, and the rivers of Ireland are the most celebrated sources of native British oysters, while Pacific oysters farmed along the coasts of Britain, France, and worldwide provide an affordable alternative.

Nutritional Value of Oysters

Oysters provide 51 kcal and 5.7 g of protein per 100 g, with 1.7 g of fat — modest protein and calories, but with a mineral profile that is extraordinary. Oysters are the single richest food source of zinc available — a single six-oyster serving can provide several times the daily zinc requirement. They also provide selenium, copper, B12, iron, manganese, and omega-3 fatty acids in meaningful quantities.

Health Benefits of Oysters

The zinc content of oysters is nutritionally remarkable — it vastly exceeds any other common food and provides the full daily zinc requirement and more in a small serving. Zinc supports immune function, wound healing, protein synthesis, and reproductive health. B12 supports neurological function. Selenium supports thyroid health and antioxidant defence. The omega-3 content, while modest in absolute terms, is meaningful relative to caloric intake. Raw oysters should be avoided by pregnant women, the immunocompromised, and those with liver conditions due to the risk of Vibrio bacteria.

How to Select and Store Oysters

Live oysters should have tightly closed shells or close immediately when tapped. They should be heavy with water — a lightweight oyster may have died. Refrigerate cup-side down in a bowl covered with a damp cloth and use within three to five days. Never store in fresh water or sealed airtight.

How to Cook and Serve Oysters

Raw oysters are opened (shucked) with an oyster knife, served in the deep cupped shell on a bed of crushed ice, with lemon juice, red wine vinegar and shallot mignonette, or Tabasco. This is the purest way to eat them. Cooked oysters suit grilling (three to four minutes in their shells until bubbling), baking with cheese and breadcrumbs (Oysters Rockefeller), or adding to soups and stews in the last minute of cooking.
