Low-fat cheese encompasses a range of cheese products produced with partially or fully skimmed milk, achieving fat levels of around 7 g per 100 g compared to the 28–35 g typical of full-fat hard cheeses. These are manufactured by using partially skimmed or skimmed milk as the base, then processing it through standard cheesemaking techniques modified for the different protein-to-fat ratio. The result is a cheese with significantly reduced caloric density — around 150–180 kcal per 100 g versus 350–450 kcal for standard hard cheese — but with good protein and calcium content. The texture and melting behaviour of low-fat cheese differs from full-fat versions: without adequate fat to lubricate the protein matrix during melting, low-fat cheese can become rubbery, stringy, or plasticine-like when heated rather than flowing smoothly. It is best used cold — in sandwiches, on crackers, or crumbled into salads — or in applications where this texture is acceptable.
Nutritional Value and Uses
Low-fat cheese provides 173 kcal and 24.4 g of protein per 100 g, with 7 g of fat — an excellent protein-to-calorie ratio. Calcium at approximately 700 mg per 100 g is outstanding — equivalent to full-fat cheddar. Use in sandwiches and cold preparations where the reduced-fat benefits are realised without heating. In cooking, accept that low-fat cheese will behave differently than full-fat — it works adequately in oven-baked dishes where the surrounding moisture prevents the worst rubbery effects, less well in grilled or pan-fried applications.
