What it is and how it is used
Potassium Citrate (also known as tripotassium citrate) is a potassium salt of citric acid with the molecular formula K3C6H5O7. As a food additive, potassium citrate is used to regulate acidity. It is also used in many soft drinks as a buffering agent.
About sequestrant additives
Sequestrants bind metal ions in food that would otherwise speed up spoilage or cause discolouration. EDTA salts (E385, E386) and citrates are the main ones. Sequestrants are typically used at very low doses and raise few flagged safety concerns.
