How to Roast
Root Vegetables - Health Benefits, Nutrition and
Vitamins
For the perfect root vegetable roast
follow these quick and easy recipe instructions:

Pour approximately 1 tablespoon of oil
into a roasting or baking tray

Place the tray in a preheated
oven at approximately 180 degrees and allow the oil to
heat

Wash the root
vegetables that you will be roasting

Many types of
root vegetables
can be roasted including carrots, yams, swede,
parsnips, sweet potato, taro (please pick from the
alphabetical list of root vegetables above)

Wash the root
vegetables by scrubbing them under cold running
water

Peel root
vegggies if
necessary and if desired (please note that the
highest nutritional content is within the skin and
the layer directly underneath the skin of the
vegetable so where possible, try to include it in
your root vegetable recipes)

Chop root
vegetables to roughly the same size so that they
cook more or less at the same time

Place the
chopped root vegetables in the roasting tray, shake
the tray to ensure all root vegetables are coated
evenly with oil

Allow to roast
for approximately 25 to 30 minutes, or until tender
(Some root veggies may take a little longer to
roast)

Shake the tray
at regular intervals during the roasting process to
prevent veggies from burning and to keep them coated
in oil
